Mock-Tunafish Chickpea Salad

Serves 4

1 can chickpeas, drained
1/4 cup diced celery
1/4 cup vegan mayonnaise
1 tablespoon fresh parsley
1/2 teaspoon dried dill
1/4 teaspoon salt
1/8 teaspoon black pepper
Sliced bread (optional)
Lettuce (optional)

1. In a large bowl, mash chickpeas with a fork or a potato masher.

2. Add the celery, vegan mayonnaise, parsley, dill, salt, and pepper, mixing until combined.

3. Serve on toasted bread with lettuce, or as a side dish on its own!
