Spiced Vegetarian Rice Pilaf

Serves 4

2 tablespoons vegetable oil
1 medium onion, chopped
1 cup long-grain rice
1 small to medium carrot, diced
1 cup broccoli florets
2 garlic cloves, minced
2 green cardamom pods
1 cinnamon stick
1 thin slice peeled ginger
1 cup thawed frozen peas
½ cup unsalted roasted peanuts, chopped

1. Add the oil to a large saucepan, and brown the onions, stirring frequently, over medium heat.

2. Add the rice, carrot, broccoli florets, garlic, cardamom pods, cinnamon stick, and ginger slice to the saucepan, and continue to stir for another minute until coated.

3. Add one cup of water and salt to taste. Bring to a boil, then stir once, cover, and reduce the heat to very low. Cook for 20 minutes.

4. Remove from heat, add peas and peanuts without stirring, and replace the cover. Let sit an additional 5 minutes.

5. Remove the cardamom, cinnamon stick and ginger, and stir. Serve and enjoy immediately!
